Since I just posted about how much I love to cook and bake, I thought I'd share a recipe I tweaked last week, which will easily become a new favorite around our house. It went from a somewhat nutritious nice snack to a super yum dessert (even though I still had it for snack)! (I Justify it by working out with Jillian Michaels in the morning!)
Peanut Butter Banana Nut Chocolate Chip Muffins- super yum!
So here is the recipe:
1 1/2 cup. wheat flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
2 eggs
1 cup mashed bananas
3/4 cup sugar
3Tb. oil
3/4 cup Peanut Butter
1 cup Chocolate chips
2/3 cup chopped walnuts
1) mix first 4 dry ingredients in a small bowl
2) in a seperate bowl, mash the bananas and add the eggs, sugar, oil, and peanut butter until well blended
3) add the dry ingredients to the wet and stir til just moistened
4) mix in the chocolate chips and walnuts then scoop into greased muffin pans
5) bake at 350 degrees for 20-25 minutes
